Not a Traditional Wedding Cake

This was the second weekend in a row with wedding cake baking on my calendar, and I have to admit, I am feeling like I'm in a bit of a groove.  When someone asks me to make a wedding cake I always feel a little hesitant as there is a bit of pressure to make a cake as expected.  Though I choose my recipients wisely, I never would try to create a perfect cake (I don't think that is possible) but I always KNOW a perfect cake is not expected.  This go round was for a friend's father, whom I know but not extremely well.  The conversation went something like this:

Them: "We would love to have you make our wedding cake, however since this is not a traditional wedding we would prefer to not have a traditional layered type wedding cake.  We are estimating about 100 guests." 
Me:  "OK, do you have a favorite flavor of cake?" 
Them: "Yes, we love yellow cake with chocolate frosting or spice cake"
Me (to myself): "A sheet cake? 100 people? What am I going to do?" No pressure here. 

Solution?  Six molasses spice bundt cakes with salted caramel sauce and whipped cream.  I worried about whether six would be enough but due to time constraints (I arrived home Friday night from my real job) and only had Saturday morning to bake the cakes.  I figured we would serve cake until it was gone, you snooze you lose.  The wedding was scheduled to start at 11:00 am so I rose at 5 to begin.  I had enough time to create six cakes, throw together a few decorations, pack everything up and deliver to the venue.  I have to say, the cakes were a huge hit and yes, there was plenty and it wasn't because these were the variety of bundt cake you would be delivered by your neighbor in Everything, Everything

Schooled

The vision for this cake creation has been in my thoughts for about three months.  In July we spent a week on the Oregon coast with our dear friends including their soon to be two year old adorable boy.  He was all about the fish.  Fish in the ocean, fish at the aquarium, fish in the souvenir shops, fishy, fishy fishy.  The cake was vanilla with my stand-by favorite buttercream frosting.  All of the embellishments were edible, that is if you like sugar candy!  Super fun cake to make and share.  The two year old's comment? "Whoa...."  "Fishy"

I wish when I had turned 21 I was as composed as the young young lady is!       In Boise on Spring Break from Cal Poly she came to celebrate with her elders.  Not only is she beautiful but she's smart!  One of three students a warded the Louis Stokes Alliances for Minority Participation (LSAMP) in STEM Undergraduate Research Scholarship for Summer 2018.    It was a true honor to create this cake for her to celebrate her coming of age party.   Happy Birthday Miranda!!

From Miss to Mrs.

This cake was a challenge.  I typically make my cakes the day OF the party.  I know they will be fresh, the decorations will be "just so" and if they aren't I can tweak them at the party.....not the case with this one.  I would not be there AND it had to be done a day and a half before the event.....the pressure!  This is exactly why I don't sell cakes for money, though I heard this one was a success even disguised as a gluten free chocolate delight!
